Scheri's Week of 1/12

We had such a busy week last week. I am looking forward to a quiet week this week, half week next week and then vacation! I'm counting down the days, can you tell? :-) I have a few carry over items from last week and no new recipes. I did make a new recipe yesterday - Moroccan Vegetable Stew. I will include my new recipe at the bottom. It turned out so good and it was super easy. We all loved it!!!

Monday: (Harsha & I are doing a 4:30 spin class, so we needed a crock pot recipe)
Spicy Carrot & Dal Soup
Rolls

Tuesday:
Vegetable & Polenta Lasagna
Spinach salad w/ mandarin oranges and pepitas

Wednesday: (Ella requested this dinner)
Baked sweet potatoes
Steamed veggies
Romaine Salad w/ apples, blue cheese & walnuts

Thursday:
Mexican black bean casserole
Guacamole

Friday:
Hummus Club Sandwiches
Pasta salad

Saturday:
Peanut Pad Thai Pizza
Lettuce Wraps

Sunday:
Left overs or go out to eat


MOROCCAN VEGETABLE STEW:

1 onion
2tbsp butter or olive oil
3 med red potatoes, diced, skin on
2 med zucchini diced
1 can diced tomatoes
.5 c red lentils
1 can garbanzo beans
1 c diced carrots
.5 tsp turmeric
.5tsp cinnamon
1 tsp coriander
.5 c cilantro
veg broth

Saute onions in butter/olive oil until soft. Add all the other ingredients and cook until vegetables are soft. Serve with couscous. (We also had hummus & pita bread, yummy!)

Scheri's Week of 1/5

This week is supposed to be cold, so lots of soups & casseroles for us! I will be trying to get back into the swing of normal life, which means no time for new recipes this week.

Monday:
Shepherds Pot Pie (this was on the menu a short while ago and we never got to it)

Tuesday:
Red Bean Stew
Rolls

Wednesday:
Lasagna (Jenn's menu inspired me!)
Salad

Thursday:
Dinner out - Harsha's Bday

Friday:
Mexican black bean casserole
Guacamole

Saturday:
Couscous
Mediterranean veggies
pita & hummus

Sunday:
We have a coconut in the fridge, so that means indian food :-) Harsha will make some type of coconut curry or rice for us.

Jenn's Menu - Week of 1/5

Well, the holidays, cooking and celebrating with family and good friends have left me absolutely exhausted (but every minute was worth it). This week will be an easy week of cooking and using up our leftovers.

Monday - lasagna and salad (leftovers)

Tuesday - burritos w/ leftover portobello chili

Wednesday - spaghetti w/frozen red sauce

Thursday - baked potatoes w/broccoli and cheese

Friday - baked ziti and salad (leftovers)

Saturday - caprese (tomatoes, fresh mozz and cucumbers w/olive oil&balsamic), garlic bread

Sunday - pizza

Scheri's Week of 12/22

We only have one carry over recipe from last week - the enchiladas. We have that on the menu, plus a couple other new recipes. I'm adding in one left over night.

Also, each year, we do something different for Christmas dinner and New Year's Day. This year, Christmas is Chinese. Almost all of the recipes are new and will be a family affair cooking them up. Here is what I have:

Monday:
Tuscan Chickpea Soup (new recipe)
Spinach salad w/ mandarin oranges and pepitas
French bread

Tuesday:
Potato & Bean Enchilada (new recipe - I won't fry the tortillas. I'll probably use black beans, because we like them more. I'm excited to see how they turn out.)
Avocado Pico Dip & chips

Wednesday:
Split Pea and Potato Soup
Salad
Bread

Thursday:
Vegetarian Potstickers
Wonton Soup (Recipe is for fried wontons. Instead of frying them, I will boil them for 8-10mins, then add them to a vegetable broth w/ grn onions and a couple drops of sesame oil.)
Paradise Spicy Bean Rice
Oriental Style Veggies (I'll add more variety of vegetables)

Friday:
Shepherd Pot Pie (mashed sweet & white potatoes, mixed vegetables & lentils added to the butter, onion, garlic, flour & broth mixture, topped w/ puff pastry & baked for about 30mins)

Saturday:

Jenn's Menu for the holidays

We have family and out of town friends coming for the holidays next week so I've planned out until the 2nd when they leave to try to make cooking easier :). It should be lots of fun!!!

Monday (12/22) -
Chicken pot pie

Tuesday (12/23) -
Lamb and feta rolls w/Cucumber-mint-yogurt sauce (from Rachel Ray's 365: no repeats)

Wednesday (12/24) - Christmas Eve - guests start to arrive!
Heading to Mom and Dad's for Christmas Eve through Christmas dinner
Brisket, potatoes, ranch style beans (my dish)

Thursday (12/25) - Christmas!
Eggs benedict, Mimosas
Turkey, etc. (Thanksgiving dinner - I'm making sweet potato casserole, chex mix and drinks)

Friday (12/26) - more guests!
Balsamic pork tenderloin
Roasted ratatouille vegetables
Tortellini with spinach-walnut pesto

Saturday (12/27) -
Dinner out!

Sunday (12/28) -
Ham

Tuesday (12/30)
We head to go skiing for 2 days so pizza for grandma and the kids

Thursday (1/1) - NY Day (will probably have my family over as well so lots of guests now :)!)
Uptown down-home chili (another Rachel Ray - this is fabulous!!)

Appetizer size quiches (I will cheat here and buy this at Sam's)

Whew....lots of fun but I'll need some rest after this! Guests are leaving on the 2nd :( and I don't have dinners planned past NY's day. Probably leftovers and pizza :).

Scheri's Week of 12/14

I've been feeling so uninspired, which results in us eating out way too much! This week, the goal is to eat all our meals at home - no eating out! I am going to try :-)

Here is what I have planned:

Monday:
Pasta w/ veggies, basil, olive oi, and mozzarella
Salad

Tuesday:
Vegetable soup in the crockpot (we have an afternoon activity, which will leave us crimped at dinner making time)
Rolls

Wednesday:
Lettuce Wraps
Vegetable stir fry

Thursday:
Potato & Bean Enchilada (new recipe - I won't fry the tortillas. I'll probably use black beans, because we like them more. I'm excited to see how they turn out.)

Black Bean and Quinoa Chili (crockpot).

Jenn's week of 12/14

It's going to be a cold week so I tried to make some "comfort food" yet easy dinners. I wanted to make some soups but I made so much last week that my kids are "souped out".

Monday -

Pot roast w/carrots, potatoes, mushrooms
