Scheri's week of 8/25

We have a pretty boring menu this week. The next couple weeks will probably look like this too. We have some home improvement construction going on and we are busy with kid's activities. Hopefully all will settle down soon and we can start being more creative again.

Monday:
Wild rice w/ veggies & feta (one of our old standbys when I can't figure out what else to make)

Tuesday:
Fajitas w/ guac
Spanish rice
Cantaloupe

Wednesday:
Polenta w/ Provolone
Steamed carrots & zucchini

Thursday:
Veggie Melts
Corn on the cob
Sweet potato fries
Salad

Friday:
Sante Fe Salad (lettuce w/ corn, black beans, tomatoes, peppers)
Quesadillas

Saturday:
Out of town.

Sunday:
Baked Ziti

Jenn's Menu Week of 8/25

I'm hoping to try some new, fun meals this week. Guy is home so it's always more fun to cook.

Monday (this item keeps getting skipped so it's on the menu again!):
Grilled Summer Vegetable Lasagna, garlic bread, salad

Tuesday:
Caprese w/tomotoes, fresh mozzarella and fresh basil, garlic bread

Wednesday:
Pepper Beef Stir Fry, Fried Rice (I'm omitting ham from recipe)

Thursday:
Ziti w/Spinich, cherry tomatoes and gorgonzola sauce, breadsticks, red leaf salad

Friday:
Out

Saturday:
Mom's for hamburgers

Sunday:
BBQ chicken breasts (w/bone), grilled corn on the cob, cole slaw

Monday:
Rockies game and out

Scheri's week of 8/18

I'm with you Jenn! Ella starts back to school tomorrow, so we'll be packing lunches, spending more time in the kitchen and making sure everyone gets to bed on time. We started with the bedtime routine last week, so I'm hoping that one won't be a problem. It's time for me to start thinking about lunches though... I need to get creative. I don't know how many hummus & cream cheese sandwiches Ella will eat this year! :-)

Here is our menu for the week:

Monday:
Vegetable Soup (I'll use some pesto, veg broth and whatever veggies I have in the house)
Blue Corn Bread

Tuesday:
Wild Rice w/ veggies & feta

Wednesday:
Black Bean Hummus & Carrot Slaw Wraps (The recipe is for a sandwich, but I think wraps sound good.) *UPDATE - My family loved this one! The Carrot Slaw was very good. We also added Garden Veg. Crm Cheese to the wraps.
Grilled sweet potatoes

Thursday:
Summer Garden Lentil & Pasta Salad (This is a new recipe for us. It looks great, so hopefully it will be! I'll let you all know what we think.)

Friday:
Spaghetti w/ vegetable marinara
Green salad
Garlic Bread

Saturday:
CRUD party - I think I'll take the Avocado Gazpacho dip & chips.
(CRUD is Harsha's running group's name)

Sunday:
Indian food... I think we'll do some type of coconut curry or perhaps go out... I have a certificate for a restaurant on 8th St that we haven't tried yet.

Jenn's Week of 8/18

Guy's travel schedule is different than I thought and we are going out Friday instead of Saturday so I changed things a bit...

Well, school has started so it's back to a more structured schedule this week! We'll be making lunches for Emma each night to bring to school so it will be a week of getting used to be in the kitchen a lot :)

Monday:
- Hamburgers
- Grilled corn on the cob
- red potatoes w/dill

Tuesday:
- Baked potatoes and steamed veggies

Wednesday:
- Spaghetti and salad

Thursday - Grilled Summer Vegetable Lasagna, garlic bread

Friday - out

Saturday:- Chicken sausage, salad w/cuc, tom, garb beans

Sunday - leftover lasagna

Black Bean and Quinoa Chili

With all this rain, I feel like I'm living in the Pacific Northwest. I'm not complaining, because we all know we need the rain in Colorado! I'm just saying we aren't used to day after day of rain. Originally, I had planned on going out to eat today, Saturday, but with all the rain, I figured Harsha might be really cold and tired when he gets home from the Ascent. With that said, I made some Black Bean and Quinoa Chili. I used the vegetables I had in the house, which included a zucchini and carrots from the garden. It is super yummy! Definitely one worth trying on a colder day :-)

Thursday - quesadillas w/peppers

Friday - Chicken Pasta Salad

Saturday - out

Sunday - hamburgers, grilled corn on the cob, red potatoes w/dill

Scheri's Week of 8/11

I don't have a single new recipe on the menu this week, but I'll try to be more creative next week. Harsha is tapering for the Ascent and I plan on being just as lazy... I'm tapering for nothing, but the desire to be lazy is hitting me strong. Here is our menu for the week:

Monday:
Pad Thai Pizza
Spinach Salad

Tuesday:
Lentil & vegetable curry
Basmati Rice
Cucumber salad

Wednesday:
Black Bean & Corn tamales
Chips & Salsa

Thursday:
Pesto Pasta & Veggies
Garlic Bread

Friday:
Peanut Pad Thai Noodles (we'll have sauce left over from Monday, so it'll make for a quick & easy meal)

Out to eat

Corn Flake Bars

I had a sweet tooth, so I decided to make something very fast. I found this recipe for Corn Flake Bars. I didn't know what to really expect, but they are good. I melted chocolate and spread it over the top. The kids loved it and it took me all of five minutes to make.

Scheri's week of 8/4

I've been finding some really fun recipe blogs recently. The Chipotle BBQ Bean Salad is from one of those sites, so expect to see lots more :-) There are some very good looking sweets recipes that I'll have to try out and share as well, but I have to do those in small portions, otherwise my bum will start growing. I don't think my running partners want to look at a growing bum, ha ha.
So here is my menu for the week. It isn't too exciting, but I did throw in the one new recipe. I'm excited to try it out and let you all know what I think. My calabasitas con crema recipe from last week was very good. It is a little on the rich side, however I'd recommend it with a mexican meal. Have a fantastic week!

Tortellini Pepperoncini Salad

Tuesday:
Lettuce Wraps
Chinese Veggie Fried Rice

Wednesday:
Grilled corn on the cob
Zucchini boats (zucchini stuffed w/ feta & grilled)
Chipotle BBQ Bean Salad

Thursday:
Risotto
Grilled veggies
Green salad
Garlic Bread

Friday:
Harsha & I are going to a wedding, so the kids will have pizza or mac n cheese

Saturday:
Harsha will make Indian food

Sunday:
going to a cook out, so I'm bringing the carrot & edamame salad and hummus w/ bread

I through together a menu quickly this week but hopefully it will be yummy. Guy is home too so we should have some nice family meals together - yea :)

Tuesday - kabobs w/chicken and veggies, corn on the cob, baked potatoes

Wednesday - Zucchini and black bean enchiladas

Thursday - Emma's bday so we'll probably go out

Friday - Grilled Portobello, bell pepper, and goat cheese sandwiches / grilled asparagus

Saturday - Emma's bday celebration w/family; out again to Casa Bonita

Sunday - BBQ at friends

Monday - Chicken Caesar Salad / garlic bread
