Jenn's Weekly Menu February 2

I think we have some yummy food planned this week. I do realize now that I have leftover enchiladas on Monday and then again on Wednesday so Monday's menu may change to something else "simple" like spaghetti - we'll see.

Monday - Leftover enchiladas

Tuesday - Grilled cheese and tomato soup (never had this last week)

Wednesday - Chicken enchiladas, corn/tom/black bean salad w/sante fe dressing (not sure what this is but I'm hoping to find it at the store - hee hee)

Thursday - Chicken Scallopini and Orzo Toss, garlic bread

Friday - Ham and Asparagus Quiche

Saturday - Skiing all day so grabbing pizza on the way home

Sunday - Kung Pao Chicken, dumplings

Scheri's Week of 1/26

It is great to be home, even with the freezing temps! Our menu is a little boring this week. I am not motivated and I really don't want to go to the store. I do have plans to get back to new recipes next week :-)

Tuesday:
Quinoa & black bean Chili

Wednesday:
Chana Masala w/ Basmati Rice

Thursday:
Butterbean soup
Rolls

Friday:
Chili Con Cincy (using Tuesday's left overs)

Saturday: (We are having friends over for dinner, which means I will have to go to the store and be a little creative!)
Black Bean and Corn Tamales
Spanish rice
Salsas & guacamole

Sunday:
Harsha's choice of Indian

Jenn's Menu Week of 1/26

I promised to get a little more creative but Guy is gone a lot this week so I'm staying easy and quick :).

Monday -
Baked chicken, whole grain rice, southwestern salsa (black beans, tom, corn, lime juice, cilantro, olive oil)

Tuesday -
Tofu fried rice (didn't have last week)

Wednesday -
Pot roast w/carrots, potatoes and mushrooms

Thursday -
Grilled cheese w/tomatoes, tomato soup

Friday -
Green chili chicken enchiladas (cr chicken soup, chicken, salsa verde, cheddar cheese, cilantro, peppers, onions, corn or flour tortillas - bake for 12 min at 350)

Saturday -
Hamburgers w/mushrooms, tator tots, green beans

Sunday -
out for superbowl / pizza for kids

Jenn's Week of 1/19

I'm feeling a little rejuvenated and ready to try to gain some balance in my life. More creative menus is one thing I will focus on a little more. I will still keep it simple when Guy is gone and have a little more fun when he is around to enjoy the food too.

Monday - skiing and out to dinner

Tuesday -
Chicken and sun-dried tom brats, baked beans, tom/cuc salad

Wednesday - (we never had this last week)
Creamy stove top mac-n-cheese
Broccoli and cheese

Thursday -
Chicken, corn, bean and cheese enchiladas (I'm adding corn and black beans to the recipe)
Mexican cole slaw

Friday -
Tofu fried rice / movie night

Saturday -
Chicken Marsala
Caesar Salad
Garlic Bread

Sunday -
Skiing and pizza at home

Scheri's Week of 1/19

We are going to California this week, so it is a short week for menu planning. I'm loving the warm weather in Colorado, but you can't beat the beaches in San Diego. We are very excited about getting out of town for a few days!

Monday: (Harsha & I have our standing date at spin class, so it is crock pot Monday for us)
Vegetable soup
Salad with blueberries, almonds and feta (dressing: red wine vinegar, olive oil & honey)

Tuesday: (weather.com says 65 degrees!)
Fajita burritos (caramelized onions & peppers, black beans, spanish rice, salsa, sour cream and avocado slices)
Chips & salsa

Wednesday:
Spinach & Parmesan Risotto
Caprese Salad
Garlic Bread

Thursday - Monday: California

Jenn's Menu Week of 1/12

I'm still not feeling very creative and we're still getting in the groove with school and activities so my menu is pretty boring this week :(.

Monday -
Chicken Caesar salad, garlic bread

Tuesday -
Creamy stove-top mac-n-cheese, 7 layer salad

Wednesday -
Chicken pot pie

Thursday -
Broccoli and cheese soup and roasted tomatoes

Friday -
Spaghetti w/homemade sauce, garlic bread

Saturday -
Chicken brats, tator tots, frozen veggies

Sunday -
Pizza

Scheri's Week of 1/12

We had such a busy week last week. I am looking forward to a quiet week this week, half week next week and then vacation! I'm counting down the days, can you tell? :-) I have a few carry over items from last week and no new recipes. I did make a new recipe yesterday - Moroccan Vegetable Stew. I will include my new recipe at the bottom. It turned out so good and it was super easy. We all loved it!!!

Monday: (Harsha & I are doing a 4:30 spin class, so we needed a crock pot recipe)
Spicy Carrot & Dal Soup
Rolls

Tuesday:
Vegetable & Polenta Lasagna
Spinach salad w/ mandarin oranges and pepitas

Wednesday: (Ella requested this dinner)
Baked sweet potatoes
Steamed veggies
Romaine Salad w/ apples, blue cheese & walnuts

Thursday:
Mexican black bean casserole
Guacamole

Friday:
Hummus Club Sandwiches
Pasta salad

Saturday:
Peanut Pad Thai Pizza
Lettuce Wraps

Sunday:
Left overs or go out to eat


MOROCCAN VEGETABLE STEW:

1 onion
2tbsp butter or olive oil
3 med red potatoes, diced, skin on
2 med zucchini diced
1 can diced tomatoes
.5 c red lentils
1 can garbanzo beans
1 c diced carrots
.5 tsp turmeric
.5tsp cinnamon
1 tsp coriander
.5 c cilantro
veg broth

Saute onions in butter/olive oil until soft. Add all the other ingredients and cook until vegetables are soft. Serve with couscous. (We also had hummus & pita bread, yummy!)

Scheri's Week of 1/5

This week is supposed to be cold, so lots of soups & casseroles for us! I will be trying to get back into the swing of normal life, which means no time for new recipes this week.

Monday:
Shepherds Pot Pie (this was on the menu a short while ago and we never got to it)

Tuesday:
Red Bean Stew
Rolls

Wednesday:
Lasagna (Jenn's menu inspired me!)
Salad

Thursday:
Dinner out - Harsha's Bday

Friday:
Mexican black bean casserole
Guacamole

Saturday:
Couscous
Mediterranean veggies
pita & hummus

Sunday:
We have a coconut in the fridge, so that means indian food :-) Harsha will make some type of coconut curry or rice for us.

Jenn's Menu - Week of 1/5

Well, the holidays, cooking and celebrating with family and good friends have left me absolutely exhausted (but every minute was worth it). This week will be an easy week of cooking and using up our leftovers.

Monday - lasagna and salad (leftovers)

Tuesday - burritos w/ leftover portobello chili

Wednesday - spaghetti w/frozen red sauce

Thursday - baked potatoes w/broccoli and cheese

Friday - baked ziti and salad (leftovers)

Saturday - caprese (tomatoes, fresh mozz and cucumbers w/olive oil&balsamic), garlic bread

Sunday - pizza
