Jenn's Week of 2/23
It's supposed to be a beautiful week so hopefully I won't be inside cooking but instead out enjoying the weather!
Monday - caprese (tom, mozz, olive oil, balsamic, basil), garlic bread
Tuesday - Spaghetti, turkey meatballs and green leaf salad (cuc, tom, onions)
Wednesday - Quesadillas w/red peppers and onions, black beans
Thursday - Grilled cheese and tomato soup
Friday - Chicken with southwestern salsa and salad (didn't make last week because I forgot I bought pork tenderloin for dinner instead)
Saturday - Pizza after skiing
Sunday - Chili w/whole wheat pita (didn't make this last Sunday b/c I made taco salad instead)

Jenn's Menu Week of 2/16
Well, last week got changed up quite a bit....we went out to eat with the kids one night that wasn't planned, my father-in-law came by for dinner so I had to change another night up so I had enough food and then I made a special steak, caesar salad and garlic bread dinner for Guy on Valentine's Day instead of what we had planned. So...you'll see repeats from last week since I already have most the food (and it's still good or frozen, thank goodness).

Scheri's week of 2/16
We have an extremely busy week ahead of us, but I promised myself that I would find time to cook and we would not eat out. So with that said, here is what I have planned:
Monday:
Black bean soup - I was inspired by a friend to cook my own beans, so that is exactly what I did Friday while Ella and Miles played with friends, then froze them. The beans, I didn't freeze the kids, not yet anyway
Taquitos - I'll fill them with squash and corn. I don't have a recipe, but This blog inspired me. If they turn out well, I will post the recipe :-)
Tuesday: (didn't get to this one last week, so here it is again)
Stuffed Bell Peppers (Rice, Cheese & Veggies)
Green salad w/ tomatoes, cucumbers, and almonds
Wednesday:
Out of town, so we will be eating out.
Thursday:
Spicy Dal & Carrot Soup
Rolls
Friday:
Something with asparagus... still looking for a good recipe. I bought a bunch and will need to use it up. I'll update later, or if you all have ideas, I'd love to hear them. Maybe a stir fry of some kind?

Jenn's Menu Week of 2/9
It's starting to snow and is pretty cold out (at least compared to our recent spring weather). It makes me want to make cold, comfort food but the forecast actually calls for pretty nice days. I think I'll mix it up with cold weather food and some other favorites. The kids have Friday and Monday off school so I'm planning the menu through next Monday night (so we can go to the store on Tuesday instead).

Scheri's week of 2/9
Since we were all in and out of illnesses last week, our menu got messed up and we ate out too much. I feel like I need to eat super healthy this week to make up for it all!

Baked potatoes - Update: Instead of doing baked potatoes, I made this Roasted Potato recipe We didn't have mayo in the house, so I used sour cream again. We really like them.
