Scheri's week of 2/9

Since we were all in and out of illnesses last week, our menu got messed up and we ate out too much. I feel like I need to eat super healthy this week to make up for it all!

Monday:
Baked potatoes - Update: Instead of doing baked potatoes, I made this Roasted Potato recipe We didn't have mayo in the house, so I used sour cream again. We really like them.
Steamed veggies
Salad w/ Blue berries and papitas

Tuesday:
Mixed Bean soup
Rolls

Wednesday:
Stuffed Bell Peppers (Rice, Cheese & Veggies)
Green salad w/ tomatoes, cucumbers, and almonds

Thursday:
Peanut Pad Thai noodles & veggies (didn't get to this one last week.)

Friday: (We are having friends over, so doing something fun)
Hummus & Pita
Moroccan Vegetable Stew
Couscous
Baklava

Saturday:
Going out to eat

Sunday:
Indian food night

I'm glad you liked the roasted potato recipe! Try it again with the mayo next time and tell us whether you can taste a difference.
