Gazpacho Pasta Salad


We have talked about liking Gazpacho, but I thought this recipe looked great with adding the pasta to it. Modifications: I added about 32 oz of tomato juice and after sitting for two hours, the noodles soaked it all up. It was great. I also think it could use another jalapeno, if you wanted. I know...me saying it could use another one! I did use fresh green onions from my garden, a nice touch. This is a keeper for summer.

We all liked this one! The kids ate seconds too :-) Used Spicy V8 w/ no jalapeno and really liked the flavor.
