Scheri's week of 9/29

We have a crazy week ahead of us, but I'm going to try a few new recipes. We loved the Polenta Lasagne from last week. I modified the recipe quite a bit though. I made the sauce - it's the same veggie/lentil marinara that I always make. It was a nice change eating lasagne w/ polenta versus the usual noodles.

Here is my menu for this week. I'll let you all know what I think of the new recipes next week.

Monday:
Black Bean Mexican Casserole (Black beans, diced bell peppers, diced onion, can diced green chilis, corn, cumin, coriander mixed together on top of crushed tortilla chips. Top w/ cheese, cook in oven for 20min. Serve w/ salsa & sour cream)

Tuesday:
Wild Rice
Sweet Potato Hash
Simmered Kabocha Squash

Wednesday:
Tropical fried rice
Egg rolls

Thursday:
out of town

Friday:
Babganoush-Hummus Pasta
Salad w/ apples, walnuts & blue cheese

Saturday:
CRUD Party - we need to take a side dish... thinking some type of pasta salad, but not sure yet.

Sunday:
Harsha is going to make Rava Idli and some other Indian dish (he didn't get home in time to make it last week, so I made a curry and decided we'd put Harsha's cooking night on the menu this coming week.)
