We have another busy week ahead of us. I had a few extra minutes this morning, so I found some new recipes that I will be trying out this week. I just hope I really have the time to get to them! Here goes:
Monday:
Black bean tacos w/ left over avocado pico from Saturday
Spanish rice
Chips & Salsa
Tuesday:
Succotash of fresh corn, lima beans, and tomatoes (I'm going to use edamame instead of lima beans)
Baked Potatoes
Green Salad w/ strawberries & almonds (the kids love this)
Wednesday:
Greek Salad Pita Sandwiches
Bean Salad
Thursday:
Couscous
Moroccan stew
Friday:
Penne & veggies w/ pesto sauce
Spinach salad w/ mandarin oranges & almonds (again, the kids love the salads w/ fruit)
Saturday:
Black Bean and Tomato Quinoa
Sunday:
Harsha's Indian food night
