Birthday Party Menu

We decided to have a small dinner/cake gathering for Birthday #2 for Miles! I can't believe he is going to be two!! The original plan was to BBQ, but I changed my mind :-) This is what we have on the menu:

Thai Iced Tea
Mango Passion Cocktails (the kids will get alcohol free cocktails)
Lettuce Wraps
Edamame
Pad Thai Pizza

And Birthday cake - probably some type of coconut cake with choo choo trains :-)

The menu is supposed to be very easy! It all looks very easy, so we'll see... If I am stuck in the kitchen for longer than an hour, I'll have to nix something. Keeping my fingers crossed that it will all work out like I want it too :-) With Harsha as my sous chef, it should all go smoothly!

Before I forget what I did, here goes :-)

Tea was made to follow recipe.

Cocktails, followed the recipe. Flavor was good, but consistency was little too thick.

Edamame, great, as always - steamed.

Lettuce Wraps - I didn't find oyster & fish sauce that was vegetarian, so I omitted it. I used more soy sauce instead. I also used white onion, no mushrooms, no egg. I totally forgot about the garlic, so no garlic. I added some Sriracha for the spice. And then I forgot the bean sprouts and onion for topping. Wow, it almost seems like I didn't follow the recipe :-)

Pizza was also wonderful, as always. One of my favorites.

I should say that the tea was very tasty. I used honey as the sweetener. I tested in a glass before I did the whole shebang. Started with sugar, but it didn't seem right, so I switched to honey and loved it.
