Jenn's Week of 6/30

Hello! We have company coming on the 2nd so I'm doing some favorite, easy standbys.

Monday:
Pork Tenderloin
Southwestern Potato Salad (leftover from Addy's bday)
Garlic Bread

Tuesday:
Tortellini Peperoncini Salad

Thursday: 0ut

Friday:
Hamb/hot dogs (kids)
Grilled corn on the cob
Cheesy potatoes

Saturday:
Chicken Enchiladas
Taco Salad
Chips and salsa

Sunday:
Brother's house for dinner

Chicken enchiladas:
Chicken Enchiladas

• 3 or 4 chicken breasts (boiled so you can shred the meat)
• 1 medium onion chopped
• 2-3 tbsp butter
• 1 can cream of chicken soup
• 1 can cream of mushroom soup
• 1 can chicken broth
• 1 small can chopped green chiles
• 1 package corn tortillas (at least 12)
• ½ pound cheddar cheese (shredded)
• ½ pound velveeta cheese (shredded or cubed)

1. Saute onion in butter
2. Add soups, broth, shredded chicken and chiles
3. In large baking dish (lightly greased) layer tortillas, sauce and then cheese
4. Repeat layers until dish is filled
5. Bake at 350 degrees for 30 minutes or until bubbly throughout

I don't have the cucumber relish typed up yet but will try to do that soon!
