This week is supposed to be a little cooler, but I thought I'd share a recipe for Mint Lemonade with you all anyway. The kids and I drank so much of this last week. It's great for hot days.
We aren't nearly as busy this week, however I will have those pre race jitters to contend with. I always feel a little more frazzled than I should be the week before a race. I am having lots of cravings, so the menu is full of those wonderful foods I love eating. Here is what we have planned:
Monday:
Red bean stew
Jello (Ella really wants jello, so we'll be having that for dessert, yummy,ha!)
Tuesday:
Black bean tamales (I've been craving these for a week!)
Jenn's Mexican slaw
Chips & salsa
Wednesday:
Ratatouille
Green salad
Thursday:
Baked Polenta w/ marinara sauce
Steamed carrots, broccoli, and zucchini
Friday:
Vegetable stir fry (mixed fresh vegetables w/ soy sauce, ginger, srirachi, garlic & 1 lime, served over steamed rice)
Saturday:
Baked Ziti
Garlic bread
