Scheri's week of 3/30

I'm struggling to come up with a menu this week, so nothing new here. I did buy a bunch of Mexican Grey Squash that I'll be cooking up this week, but that is the extent of my creativity! I'll get back into the swing of things next week and get some new recipes on the menu.

Monday:
Black Bean Soup w/ Rice & salsa
Sauteed Mexican Grey Squash

Tuesday:
Risotto
Steamed Veggies
Salad

Wednesday:
Peanut Pad Thai noodles & veggies

Thursday:
Veggie Stir fry (didn't get to this one last week)

Friday:
Mac n Chs Casserole bake

Saturday:
out of town

Indian Food night - Harsha found a great blog that has inspired him to cook more fun Indian food :-)

Jenn's Week of 3/30

It's almost April so I'm getting inspired by some grilling recipes and more warm weather cooking -yea!!

Sunday - smoked turkey legs w/cajun rub (will use leftovers for ench), grilled stuff portabello mushrooms, corn and tomato salad

Monday - Smoked turkey ench (kind of making up a recipe: blk beans, salsa verde, lowfat cheese, roasted peppers, lowfat sour cream, whole wheat tortillas), mex salad w/corn, lettuce, blk beans

Tuesday - portabello cheeseburgers, sweet potato fries

Wednesday - Baked pasta w/turkey sausage, salad

Thursday - Pork tenderloin, mediterranean stuffed tomatoes

Fri - Turkey brats, tators, corn

Sat - Caprese salad, garlic bread

Sun - Hamburgers, edamame salad, sliced baked potatoes

Jenn's Menu Week of 3/23

So, I ran to the store to grab a few things today and decided to quickly plan a menu and get all my groceries. The menu is therefore simple but we'll be out and about a lot this week with Spring Break and I want it easy.

Monday -
Grilled Chicken, Rice, Salad

Tuesday -
Sloppy joes, corn, tator tots

Wednesday -
Out to dinner

Thursday -
Almond stuffed Chicken (this has been on my menu but I still haven't made it)
Edamame Salad
Garlic Bread

Friday -
Fish, asparagus, rice or black beans

Saturday -
Guy and I skiing so we'll bring pizza home

Sunday -
maybe spaghetti or something easy on the grill

Since we are having a dose of winter this week, I am planning some cozy foods :-)

Potato & Butter Bean soup
Fruit Salad

Red Bean Stew

Wednesday:

Jenn's Week of 3/16

Guy is gone almost the entire week so I'm going to keep it simple and light/healthy.

Monday - tortellini pepperoncini salad

Tuesday - grilled chicken, rice, edaname salad

Wednesday - baked ziti, salad

Thursday - tilapia, broccoli w/cheese, corn bread

Friday - bison burgers, chopped caprese salad, salad w/garbanzo beans, cucumbers, tomatoes, peppers

Saturday - skiing so we'll either go out or pick up pizza on the way home

Sunday - almond stuffed chicken, grilled asparagus, garlic bread (didn't have last week)

We have another crazy week ahead of us. I can't believe the weather will be so nice all week once again, so we are planning some fun warmer weather recipes again.

Monday:
Couscous
Moroccan Stew

Tuesday:
Polenta Tamale Pie (new recipe - I'll use just a little cheese, fresh salsa, veg broth, and black beans)

Wednesday:
Harsha volunteered to make indian food

Thursday:
Mac n Chs w/ sweet potatoes
steamed veggies

Friday:
Wild Rice w/ vegetables
Salad w/ apples, walnuts & feta

Saturday:
Bulgur Veggie Burgers (new recipe - I had it on the menu once already, but we didn't get to it)
Bean Salad

Jenn's Week of 3/9

Guy is home for dinner all week, Holly is coming on Wednesday and we go out of town Friday morning so it will be a fun-filled week! Mom will be staying with the kiddos and cooking the weekend meals.

Monday - Tex mex calzones, black bean salad

Tuesday - Caprese, garlic bread

Wednesday -Green chili chicken enchiladas (I also add cilantro and red peppers w/whole wheat tortillas)

Thursday - Almond stuffed chicken, green beans, whole grain rice

Friday - tilapia, green beans, corn bread (mom's menu) / Scott is cooking lasagna and I'm making caesar salad and garlic bread in Breckenridge

Saturday - pork chops, potatoes, corn / going out in Breck

Sunday - pizza

Once again, I wasn't that motivated today, so I went through our menus for the last 6 months to get ideas. I think I found some good ones.

Scheri's week of 3/2

When I thought the weather couldn't get any nice, it does. I can't believe we will hit 70 degrees this week! I'm itching to start getting into some of our spring/summer recipes :-) Here is our menu:

Monday:
Spinach & Parmesan Risotto
Summer Vegetable Bake w/ Basil Puree (new recipe)
Salad w/ almonds, tomatoes, carrots & cucumber

Tuesday:
Black bean and lentil tacos (recipe is just lentil, but I'm adding black beans too) UPDATE - I was worried the beans would be too spicy for the kids, so I added about .5c raisins. Everyone loved these!
Nachos

Wednesday:
Bulgur Veggie Burgers w/ Lime Mayo (new recipe)
Edamame and Carrot Salad w/ Rice Vinegar Dressing

Thursday:
Lentil & Tomato Soup
Rolls

Friday:
Stuffed shells
Salad w/ grapes & pepitas

Saturday:
left overs

Sunday:
Harsha's indian food night :-) I think it will be chana masala.

Flank Steak with Pepporoncini Relish, whole wheat pita with dill garlic yogurt dip

Chicken pot pie

Thursday:
Leftovers or pizza

Friday:
Almond Stuffed Chicken, fresh green beans, whole grain rice

Saturday:
Hamburgers, baked beans, Asian cole slaw

Sunday:
Tex Mex calzones and black bean salad
