When I thought the weather couldn't get any nice, it does. I can't believe we will hit 70 degrees this week! I'm itching to start getting into some of our spring/summer recipes :-) Here is our menu:
Monday:
Spinach & Parmesan Risotto
Summer Vegetable Bake w/ Basil Puree (new recipe)
Salad w/ almonds, tomatoes, carrots & cucumber
Tuesday:
Black bean and lentil tacos (recipe is just lentil, but I'm adding black beans too) UPDATE - I was worried the beans would be too spicy for the kids, so I added about .5c raisins. Everyone loved these!
Nachos
Wednesday:
Bulgur Veggie Burgers w/ Lime Mayo (new recipe)
Edamame and Carrot Salad w/ Rice Vinegar Dressing
Thursday:
Lentil & Tomato Soup
Rolls
Friday:
Stuffed shells
Salad w/ grapes & pepitas
Saturday:
left overs
Sunday:
Harsha's indian food night :-) I think it will be chana masala.
