Jenn's Week of 3/16

Guy is gone almost the entire week so I'm going to keep it simple and light/healthy.

Monday - tortellini pepperoncini salad

Tuesday - grilled chicken, rice, edaname salad

Wednesday - baked ziti, salad

Thursday - tilapia, broccoli w/cheese, corn bread

Friday - bison burgers, chopped caprese salad, salad w/garbanzo beans, cucumbers, tomatoes, peppers

Saturday - skiing so we'll either go out or pick up pizza on the way home

Sunday - almond stuffed chicken, grilled asparagus, garlic bread (didn't have last week)

even though you 2 are the only ones that do this I look forward to every Monday when I can check the menus and get ideas for my own. I have definitely added a lot of new items to our meals thanks to you all.

For the baked ziti, I've used this recipe - http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1662827 and I also have a baked pasta recipe on the menu for this week. I've been playing with a bunch of ingredients for the edamame salad but here's one I've used and enjoyed (even my kids like!) - http://www.recipezaar.com/Edamame-Salad-175799.
