Jenn's Weekly Menu - 4/28

I'm really enjoying our "blogs" and thank everyone for sharing their menus! It's giving me lots of ideas and keeping me creative :). The tostadas that I made last week (cooking light recipe) were really good (and would be fine w/o chicken but more veggies).


Monday: Spinach calzones w/blue cheese, greens with pears and avocado (Val's recipe)

Saturday: Family over – ribs/brisket/tri-tip??, cucumber salad, fresh potato salad, guac/salsa/chips
- will send my cucumber relish salad later..it's yummy and fun for summer!

Sunday: pizza

I love our blog! When I start planning out a very boring menu, I'm inspired to be more creative and try new recipes. I really like that! Thank you, ladies!!!

Is the Calzone recipe new? It looks really fun. You have a fun menu this week! Have you made the summer squash soup before too? They look great!

Hi! I'm glad you're enjoying this too. Thanks so much for setting it up!!

This calzone recipe was new and it was good. I've done just an Italian calzone in the past where I just add sauce and other ingredients we like such as mushrooms, onions, sausage, etc. I used crescant dough instead of the pizza dough they suggested. I love the whole wheat dough (frozen) that you can buy at Whole Foods - I just couldn't get there for this meal but it's what I would suggest.

The summer squash soup was new too and I loved it. Guy and Emma liked it too but not Jake and Addy. I served it warm and also pureed the carrot/onion mixture. I liked puree'ing (is that a word?) it all. I think it would be good cold too.

The garlic fries look good. I haven't had much luck making my own. Have you tried this recipe? Let me know how they come out.
