Scheri's Week of 12/22

We only have one carry over recipe from last week - the enchiladas. We have that on the menu, plus a couple other new recipes. I'm adding in one left over night.

Also, each year, we do something different for Christmas dinner and New Year's Day. This year, Christmas is Chinese. Almost all of the recipes are new and will be a family affair cooking them up. Here is what I have:

Monday:
Tuscan Chickpea Soup (new recipe)
Spinach salad w/ mandarin oranges and pepitas
French bread

Tuesday:
Potato & Bean Enchilada (new recipe - I won't fry the tortillas. I'll probably use black beans, because we like them more. I'm excited to see how they turn out.)
Avocado Pico Dip & chips

Wednesday:
Split Pea and Potato Soup
Salad
Bread

Thursday:
Vegetarian Potstickers
Wonton Soup (Recipe is for fried wontons. Instead of frying them, I will boil them for 8-10mins, then add them to a vegetable broth w/ grn onions and a couple drops of sesame oil.)
Paradise Spicy Bean Rice
Oriental Style Veggies (I'll add more variety of vegetables)

Friday:
Shepherd Pot Pie (mashed sweet & white potatoes, mixed vegetables & lentils added to the butter, onion, garlic, flour & broth mixture, topped w/ puff pastry & baked for about 30mins)

Jenn's Menu for the holidays

We have family and out of town friends coming for the holidays next week so I've planned out until the 2nd when they leave to try to make cooking easier :). It should be lots of fun!!!

Wednesday (12/24) - Christmas Eve - guests start to arrive!

Thursday (12/25) - Christmas!

Turkey, etc. (Thanksgiving dinner - I'm making sweet potato casserole, chex mix and drinks)

Whew....lots of fun but I'll need some rest after this! Guests are leaving on the 2nd :( and I don't have dinners planned past NY's day. Probably leftovers and pizza :).

Scheri's Week of 12/14

I've been feeling so uninspired, which results in us eating out way too much! This week, the goal is to eat all our meals at home - no eating out! I am going to try :-)

Here is what I have planned:

Vegetable soup in the crockpot (we have an afternoon activity, which will leave us crimped at dinner making time)

Sweet & Sour stir fry w/ rice (sauce is ginger, garlic, soy, srirachi, pineapple juice, lime and honey)

Spinach Lasagne
Garlic Bread

Thursday:
Butternut Squash Soup (1.5 squash, onion, garlic, .5c lentils, salt, pepper, broth, milk, pinch of cayenne - blend)

Penne w/ pesto & veggies
More salad :-)

Sat thru Mon - Harsha will be cooking solo w/ the kids. They'll have a blast and eat too much butter :-)

Jenn's Menu Week of 11/30

Sunday -
Tortellini Soup:
1. Saute in olive oil - 1 large onion, 1 chopped gr pepper, 8 gloves garlic
2. After sauteed - add in 5cans broth, 2 cans stewed tomatoes, 2 tbsp dried basil
3. Also saute - 1 lb italian sausage (I use turkey sausage) and add to soup
4. Add - 1 bag spinach leaves
5. Add to taste - 1-3 boullion cubes, salt, pepper, tabasco
6. Just before serving add: 1 lb cheese tortellini and cook until tender
7. Top w/parmesean cheese

Monday - Chicken pot pie

Tuesday - Black bean burrito bake

Wednesday - kraut burgers, corn

Thursday - noodles, broccoli

Friday - Pasta!!
- Spaghetti w/red sauce (in olive oil cook garlic and onion 5 min...add carrots, mush and bell pepper for 10 min...increase heat to high and add 2 lbs tom chopped w/their juice, fresh basil, season'g...simmer, reduce to medium for 15min until thickened)
- garlic bread
- caesar salad

Saturday - out of town through Tuesday (Mom's menu)
- pizza

Sunday -
- hamburger stroganoff, veggie

Scheri's Week of 11/17

The Orange Cauliflower Mac n Cheese was really good. I added some pepper jack cheese and lots of pepper, and left out the breadcrumbs (I'm not a big fan). We all enjoyed it. This week is going to be another crazy busy week. The kids start swim lessons on Monday & Wednesday, so I have to choose dishes that I can make ahead of time. Here goes:

I was hoping this week would be a little calmer than last, however it isn't turning out that way. I am trying to keep it simple this week with menu items that I can make at nap time. This is also our first week of doing 'tell me about yourself' cards at the table. It should be fun hearing what the kids have to say about themselves.

Scheri's week of 10/27

Happy Halloween!!! We have a lot of fun activities planned for the week. I am also trying to plan some festive dinners, so we'll see how they turn out. This is what I have planned:

Monday:
left overs (Harsha & I had a date, but didn't have enough time for dinner.)

Tuesday:
Roasted Ghosts (I'll most likely make them a little healthier and omit the crm chs - we have it w/ the bread anyway)
Glazed carrots (we'll call them our tiny pumpkins)
Ghost Toast (I'm going to use a Whole Grain White Bread)
Salad w/ apples, craisins, walnuts & blue cheese

Wednesday:
Pumpkins filled w/ maggots - HAHA!
I still haven't cooked my bright orange acorn squash, so I'll roast them and fill them with veggies & wild rice.

Thursday:
Halloween Spaghetti & Eyeballs The recipe is more for the presentation idea. We'll use grape tomatoes w/ a little mozz chs for the eyes, broccoli for the nose, zucchini for the ears and a thin carrot slice for the tongue.

Warm Pumpkin Salad w/ Polenta & Candied Pumpkin Seeds

Saturday:
Halloween Party- I still need to figure out what spooky dish to make.

Scheri's Week of 10/13

We were so busy last week. I'd love to say this week will be different, but it doesn't look like it will be. We did make the Babganoush-Hummus Pasta and loved it! Harsha got home before the kids and I did, so he actually made it. I know he modified the recipe a little, but not sure exactly what his modifications were. It tasted great, especially with the salad, yummy! Here is my recipe for this coming week:

Scheri's week of 9/29

We have a crazy week ahead of us, but I'm going to try a few new recipes. We loved the Polenta Lasagne from last week. I modified the recipe quite a bit though. I made the sauce - it's the same veggie/lentil marinara that I always make. It was a nice change eating lasagne w/ polenta versus the usual noodles.

Here is my menu for this week. I'll let you all know what I think of the new recipes next week.

Monday:
Black Bean Mexican Casserole (Black beans, diced bell peppers, diced onion, can diced green chilis, corn, cumin, coriander mixed together on top of crushed tortilla chips. Top w/ cheese, cook in oven for 20min. Serve w/ salsa & sour cream)

Tuesday:
Wild Rice
Sweet Potato Hash
Simmered Kabocha Squash

Wednesday:
Tropical fried rice
Egg rolls

Thursday:
out of town

Friday:

CRUD Party - we need to take a side dish... thinking some type of pasta salad, but not sure yet.

Scheri's Week of 9/22

I'm trying a couple new recipes this week. Last week, the only new recipe I tried was the Zucchini Gratin and we did enjoy it. It's not really something we eat a lot of, however I would make it again when the weather is colder. I'll let you all know what I think of the new recipes this week. Have a fantastic week!

Polenta Lasagne (I may use cottage cheese rather than ricotta, haven't decided yet. I will also make my own marinara sauce w/ lots of veggies & lentils.)

Peanut Pad Thai w/ veggies & rice noodles

Thursday:
Grilled stuffed bell peppers - Cook 1 cup wild rice. Meanwhile, saute carrots, zucchini, onion, and garlic. Add the cooked rice. Mix in some feta cheese (I like the sundried tomato variety). Stuff mixture into red bell peppers and cook on grill until pepper is soft.
Green Salad

Friday:
Harsha is going to make Rava Idli and a coconut curry

Jenn's Menu 9/15

Hello everyone! I don't have a lot of exciting items on the menu but I have a lot of things "hanging out in my cubbards and freezer" so I'm hoping to get rid of some stuff and not have too much shopping tomorrow :)! Some are also things that I didn't do the last 2 weeks that have moved to this week.

I'm still trying to get inspired this week. We had a great time with the menu last week, but this week is going to be another story. I am trying to find a good recipe for home made energy bars, so if you have one, please pass it on. I'll post the recipe if I find a good one.

My recipe modifications for the week

Since I am always making modifications, I thought I should document them :-) To start, the Capellini Caprese was soooo good! I didn't cook the onions, tomatoes, etc. Instead, I cooked the pasta, rinsed it and then added the tomatoes, basil and diced fresh mozzeralla. For dressing, I minced onion and garlic, combined with olive oil and balsamic vinegar. It was caprese with pasta and we all loved it!

We also enjoyed the Couscous with garbanzo beans, prunes and almonds. I don't think it would have been as good without the butternut squash, so if you make it, also make the squash. Rather than spicing the couscous with cinnamon and mint, I used cumin, coriander and cayenne. I was worried it would be too sweet if I did the cinnamon in the couscous and served it with candied squash. I think I made a good call. The kids ate every drop on their plates!

Finally, Harsha is home tomorrow, Friday, so we celebrated with wassail, an almond cake, and berries. The recipe for the cake was actually a Pistachio cake, however I didn't have any in the house. I used almonds and 1 tsp almond extract. It was wonderful!

Jenn Menu Week of 9/8

Guy is gone all week so you'll notice the "kid-focused" items. They should be fun though :)

Mon - macaroni and cheese with roasted tomatoes, mixed greens w/cucumber/tomatoes

Tues - roasted turkey w/roasted bell peppers, onions, and carrots

Wed - make pizza w/kids - not sure exactly what we'll do yet but I found Boboli makes a whole wheat crust now so I'm so excited!! We'll probably just add sauce, cheese, zucchini, mushrooms

Thurs - home made chicken pot pie (I've had this in my freezer and since this is soccer night and Guy is gone, this will be an easy night for us)

Fri - we're going camping after Guy gets off work so we'll probably have to eat out

Sat - camping: bison burgers, corn, baked beans, and of course, S'mores :)

Sunday - Caprese salad (tomatoes, fresh mozz, fresh basil, olive oil and balsamic), fresh garlic bread (with garlic chunks and olive oil)

Scheri's Week of 9/8

The kids are watching their Sat morning cartoon and I'm feeling inspired to cook. I have several new recipes to try this week. I'll give you all my opinion of them next week. Here is my menu for the week:

Monday:

Wednesday:
Capellini Caprese This is a new recipe. Rather than using the Kraft dressing, I will make a simple one. I think I'll use fresh mozz or parm instead too.

Thursday:
Couscous with garbanzo beans, prunes and almonds
This is another new recipe. I think I'll use cranberries rather than prunes, which is what one of the comments suggested. I'll also use veg broth.
Candied Butternut Squash I haven't used this particular recipe, but I've made candied butternut squash before. It was the suggested side/topper for the couscous, so I'll try it.

Friday:
Pizza night - I have pottery class, so the kids & Harsha are on their own.

Saturday:
Chinese vegetable stir fry w/ rice

Sunday:
Twice Baked Sweet Potato Boats This is a new recipe.

Scheri's Week of 9/1

Harsha is off this week and we are finishing the pergola and finalizing the plans for the balcony. We are trying to fit in a few day trips as well, so my menu this week is kind of funny. It's amazing how working on house projects throws any menu out the window. Anyway, this is what I'm planning on doing :-)

Monday:
We actually fed the kids cereal, bc we were busy with the cross beams.

Tuesday: (We have to wait for the inspection tomorrow, so we don't have any work to do. We'll actually have dinner, go to the park, and do some fun shopping.)

Ordering pizza - we have the final framing inspection, so we will be completing the pergola.

Thursday: (We should have the final inspection for the pergola and Harsha will be getting the paperwork for the balcony permits ready, whew - it's a lot of work!)
Coconut Vegetable Curry w/ Basmati Rice (This is a Harsha-made meal)

Friday:
The plan is to take a trip to Leadville for a train ride.

Saturday:
Harsha & I are going to try the Mozaic in Palmer Lake.

Val's week of 9/2

It's been a while.... I couldn't even remember my password to get into the blog!!!

Anyway...

Tuesday: Pasta w/ cheese sauce and brocc.

Cheese sauce (new recipe):
1-16 oz can Great Northern beans rinsed and drained.
1 c. milk
1 c. shredded cheddar
1 T. minced onion flakes (or equivalent)
1/2 tsp dry mustard
1/8 tsp garlic powder (sounds like it might need more... and fresh!)
1/8 tsp pepper
salt to taste

Combine in blender and blend until smooth. Pour into small sauce pan and heat, stirring, until mixture begins to boil. Serve over pasta (or veggies/potatoes) (from: Lean and Luscious Meatless)

Wed. : Southwestern Chicken Hash (Cooking light -15 Min. cookbook) with cornbread and salad

32 oz southern style hash browns
1/2 c. chopped onions
2 1/3 c. chopped cooked chicken breast
15 oz can mexican style stewed tomatoes w/ jalapeno and spices, undrained
1 8oz can corn
1/2 tsp cumin
1/4 tsp salt

Brown potatoes and onion, add chicken and remaining ingredients, cook 5 minutes or until thoroughly heated. Stir often.

Thursday: Grill turkey burgers w/shredded cheddar and basil mixed into meat. W/ grilled veggies.

Fri: eat out!

Scheri's week of 8/18

I'm with you Jenn! Ella starts back to school tomorrow, so we'll be packing lunches, spending more time in the kitchen and making sure everyone gets to bed on time. We started with the bedtime routine last week, so I'm hoping that one won't be a problem. It's time for me to start thinking about lunches though... I need to get creative. I don't know how many hummus & cream cheese sandwiches Ella will eat this year! :-)

Here is our menu for the week:

Vegetable Soup (I'll use some pesto, veg broth and whatever veggies I have in the house)

Black Bean Hummus & Carrot Slaw Wraps (The recipe is for a sandwich, but I think wraps sound good.) *UPDATE - My family loved this one! The Carrot Slaw was very good. We also added Garden Veg. Crm Cheese to the wraps.

Summer Garden Lentil & Pasta Salad (This is a new recipe for us. It looks great, so hopefully it will be! I'll let you all know what we think.)

Guy's travel schedule is different than I thought and we are going out Friday instead of Saturday so I changed things a bit...

Black Bean and Quinoa Chili

With all this rain, I feel like I'm living in the Pacific Northwest. I'm not complaining, because we all know we need the rain in Colorado! I'm just saying we aren't used to day after day of rain. Originally, I had planned on going out to eat today, Saturday, but with all the rain, I figured Harsha might be really cold and tired when he gets home from the Ascent. With that said, I made some Black Bean and Quinoa Chili. I used the vegetables I had in the house, which included a zucchini and carrots from the garden. It is super yummy! Definitely one worth trying on a colder day :-)

Corn Flake Bars

I had a sweet tooth, so I decided to make something very fast. I found this recipe for Corn Flake Bars. I didn't know what to really expect, but they are good. I melted chocolate and spread it over the top. The kids loved it and it took me all of five minutes to make.

Scheri's week of 8/4

I've been finding some really fun recipe blogs recently. The Chipotle BBQ Bean Salad is from one of those sites, so expect to see lots more :-) There are some very good looking sweets recipes that I'll have to try out and share as well, but I have to do those in small portions, otherwise my bum will start growing. I don't think my running partners want to look at a growing bum, ha ha.
So here is my menu for the week. It isn't too exciting, but I did throw in the one new recipe. I'm excited to try it out and let you all know what I think. My calabasitas con crema recipe from last week was very good. It is a little on the rich side, however I'd recommend it with a mexican meal. Have a fantastic week!

Another busy week for us! Last week's Edamame and Carrot salad was wonderful! I suggest making it the day before, because the left overs tasted even better than the fresh salad. Because the weather was cool on Wed and Thur, we skipped what I had planned and made something else. I can't recall what we made though... This week, I don't have anything new on the menu. Scheri's week of 7/21

I am trying a handful of new recipes again this week. With the hotter temps, I decided I need more salad recipes. We had really good luck with our recipes last week. The exception was the black bean burgers weren't the best. They didn't stick together very well and the flavor was a little bland. I think I prefer the rice variety of veggie burgers. The chopped veggie salad w/ feta and watermelon was great! The only problem with it was that it didn't keep well. If you make it, you want to make sure you can eat it all or cut the recipe in half. I would recommend making it!
So this is what I have planned for our week:

Monday:
Romaine salad w/ berries
Lima Bean soup - I cooked the beans in the pressure cooker w/ veg broth. I cooked leeks, celery and carrots in .5tsp olive oil until tender, then added the beans & broth. Added some parsley and simmered.

Tuesday:
Pesto Risotto-Rice Salad (new - recipe below)
Edamame and Carrot Salad w/ Rice Vinegar Dressing (New Recipe - I did read the reviews and they said to add ginger & use a hot pepper oil, so I'll be trying that.)

Wednesday:
Quinoa, Corn and Tomato w/ chive infused oil
Spinach salad

Thursday: (We are going to do a picnic dinner. The dip recipes are new.)
Spinach Parmesan Dip

Scheri's week of 7/14

I'm being inspired by Jenn and trying some new recipes, including a couple from Jenn! Here we go:

Monday: (it is 4:30 and I'm still deciding what to make for dinner tonight. I'll update later :-) )
We did decide on dinner :-) We made chana masala, parathas, cucumber salad and blueberries/strawberries.

Tuesday:
Parmesan & Spinach Couscous
Grilled Asparagus w/ lemon & garlic
Stuffed Zucchini w/ potatoes & corn (I plan on grilling it) - We enjoyed these. Cooking them on the grill adds that grilled flavor which we love, so I would recommend doing that.

Wednesday:
Jenn's Tortellini Pepperoncini Salad - Very yummy! I could have sworn I had pepperoncinis in the fridge, but we didn't, so I used .25c jalapeños, diced. Turned out great!

Thursday:
Chopped veggie salad w/ watermelon & feta
Spiced Black Bean Burgers (It's been a long time since I've made our own burgers, so we'll see how it goes.)
Sweet potato fries

Friday:

This week is supposed to be a little cooler, but I thought I'd share a recipe for Mint Lemonade with you all anyway. The kids and I drank so much of this last week. It's great for hot days.

We aren't nearly as busy this week, however I will have those pre race jitters to contend with. I always feel a little more frazzled than I should be the week before a race. I am having lots of cravings, so the menu is full of those wonderful foods I love eating. Here is what we have planned:

Scheri's Week of 6/30

I can't believe it is already July! I know everyone is crazy busy with vacationing, but we are actually going to be home almost all month! YAY!!! That hasn't happened for a while, so I'm excited. We have a fun menu this week. A few repeats, but goodies. Here we go:

Monday:
Green salad w/ tomatoes & red bell peppers
Spicy Carrot & Dhal soup

Tuesday:
Grilled stuffed bell peppers - Cook 1 cup wild rice. Meanwhile, saute carrots, zucchini, onion, and garlic. Add the cooked rice. Mix in some feta cheese (I like the sundried tomato variety). Stuff mixture into red bell peppers and cook on grill until pepper is soft.

Wednesday:
Dinner is up in the air. I think Harsha might meet me somewhere. I have a hair appt at 2:30 (the cut was last week and the color this week) and he has a meeting at 6:30, so there won't be much time... Regardless, we'll plan on eating out.

Thursday:
Balsamic Bean Dip w/ pita bread & veggies (For the recipe - I use 1tbsp olive oil, 1 tbsp sun dried tomato pesto and about 2 tbsp balsamic vinegar)
Gazpacho (For this recipe, I use spicy V8 and use chili sauce rather than hot pepper sauce)

Friday:
Veggie Burgers w/ grilled onion, guac, lettuce & tomato
Grilled Corn on the cob
Grilled Veggies: sweet potatoes, red bell peppers, carrots & zucchini. I cook them on foil on the grill w/ a tomato sauce - Spicy V8, Chili sauce, soy, garlic & ginger

Saturday:
Ella's princess slumber party! We'll be making a variety of finger sandwiches:
Cucumber Mint Tea Sandwiches
Carrot Raisin Tea Sandwiches
Banana Honey Tea Sandwiches (bananas, honey, squeeze lemon juice on sweet bread - probably raisin)
Pineapple Tea Sandwiches
Blueberry Scones
Devonshire Cream
Variety of fruits & veggies
And of course, the tea.

And for dessert, the girls will be having chocolate fondue with cheesecake, pound cake, pineapple, banana, strawberry, and whatever other fruit I can think up :-) It is going to be a blast!!!

We are finally back from our wonderful vacations! It's going to be an easy cooking week. Here's my menu....

Monday:
BLT (turkey bacon) sandwiches w/basil aioli spread
Salad w/cucumbers, garbanzo beans and cheese

Basil Aioli: 1/2 cup reduced fat mayonnaise, 1/4 cup chopped fresh basil, 1 small garlic clove minced, 1 teaspoon fresh lemon juice, salt and freshly ground black pepper to taste

Tuesday:
Chicken caesar salad

Wednesday:
Spaghetti w/garlic bread

Thursday:
Cheese and red pepper quesadillas
Scheri's Sante Fe Salad (chopped romaine w/ black beans, corn, tomatoes, diced chilies)

Friday:
Out to Amanda's Fonda w/family

Saturday:
Grilled BBQ ribs
Grilled corn on the cob
Ranch potatoes (marinate chopped red potatoes in olive oil and dry ranch dressing packet and cook in oven on cookie sheet at 400 for about 30 minutes)

Sunday:
Movie night w/pizza

Scheri's Week of 6/2

I'm not very inspired this week. We had no food in the house last night, so we had pancakes, fruit and hash browns for dinner. The kids loved it, so no complaints. I just haven't had any great ideas... I did go grocery shopping this morning and bought a ton of food, so hopefully this week looks better than I feel about it... I do have a huge craving for salads, so there will be lots of those!

Monday:
Baked potatoes w/ cheese, sour cream & salsa
Salad (lettuce w/ green beans, cucumbers, tomatoes, garbanzo beans, blue cheese)

Tuesday:
Margaritas (yes, we are planning drinks in middle of the week!)
Cheese & Black bean Quesadillas
Sante Fe Salad (chopped romaine w/ black beans, corn, tomatoes, diced chilies)

Wednesday:
Grilled Zucchini, Carrots & potatoes w/ butter & garlic
Bean Salad
Veggie Burgers (we buy the GardenBurger brand)

Thursday:
Mixed bean curry w/ Basmati rice
- 1 tsp oil
- 1 med onion, diced
- 2 minced garlic cloves
- .5 tsp minced ginger
- 3 cups beans (I'll use .5 c lentils, garbanzo beans & great northern)
- 2 diced tomatoes
- 1.5 cups broth
- 1 tsp cumin, 1 tsp coriander, 1/8 tsp cayenne, .5 tsp turmeric, 1 tsp garam masala

Cook onions, garlic & ginger in oil until tender. Add beans, tomatoes & broth. Cook until lentils are soft, then add the spices.

Friday:
Lasagne
French Bread
Salad

Scheri's week of 5/26

We made it back from our camping trip all in one piece :-) It was beautiful and I can't wait to go again in June. Anyway, since we were gone, I neglected to do my menu for the week. Mon, Tues & Wed, we did the usual camping type food. Starting tomorrow, we'll be back in the swing of things for normal cooking.

This is what I have planned for the rest of the week:

Thursday:
Pad Thai Noodles and veggies - we have left over Peanut Pad Thai sauce from Saturday, so I'll thin it and use on sauteed veggies & rice noodles.

Friday:
Black bean tacos
Mexican coleslaw
(we didn't get this one in last week, so it's a repeat)

Birthday Party Menu

We decided to have a small dinner/cake gathering for Birthday #2 for Miles! I can't believe he is going to be two!! The original plan was to BBQ, but I changed my mind :-) This is what we have on the menu:

Thai Iced Tea
Mango Passion Cocktails (the kids will get alcohol free cocktails)

Pad Thai Pizza

And Birthday cake - probably some type of coconut cake with choo choo trains :-)

The menu is supposed to be very easy! It all looks very easy, so we'll see... If I am stuck in the kitchen for longer than an hour, I'll have to nix something. Keeping my fingers crossed that it will all work out like I want it too :-) With Harsha as my sous chef, it should all go smoothly!

Jenn's Menu Week of 5/19

We have a fun filled week of school, soccer and birthday parties so I don't have a lot on the menu. Should be a great week w/not a lot of cooking :) We'll be out of town next week so I'm making a lot of casseroles for our family (since they are watching the kiddos) but probably won't have time to post everything. Valerie's week of 5/12

Note from last week: The falafel was good, but no comparison to the deep fried you can get in Manitou (but a lot healthier). I didn't like the Tahini sauce, but Rich did.

Tuesday: (Braden) Mac and Cheese w/steamed carrots and french bread. This one has been on the menu for 3 weeks now, finally Braden got his dinner!

Thurs: Oven fried chicken (breasts dipped in cracker crumbs, sprinkled with olive oil) and leftover mac and cheese with salad

Banana Bread Recipe

So I was trying to figure out what to pack for airplane food and decided to make some banana bread. I've made this recipe in the past and enjoyed it, so here it is:

Banana Bread

I follow the recipe for the most part. I use the half applesauce/half oil modification. I also decrease the sugar to 3/4 c. and sprinkle natural sugar crystals on top of it. The kids really like having the sugar on top of the bread and you won't miss any sugar from within.

- 15 ounce can red kidney beans
- 15 ounce can white kidney beans
- 1/2 c parmesan cheese

Friday: Grilled turkey brats, cucumber relish (I will send this - sorry!), potatoes (mashed w/cheese, onions, milk, sour cream)

Terriyaki sauce/marinade from last week

1/2 c. soy sauce
1/2 c. sugar
1 1/2 T. red wine vinegar
2 tsp. veg. oil
1 clove minced garlic
1/4 tsp. ground ginger
I didn't follow the recipe exactly, so add more of what you like (I added 2 cloves of garlic) and enjoy! It was great on BBQ chicken and rice!

Monday (Elana): Soft Tacos (No sides... no time... Dance after school, Landsharks running at 5:30, soccer at 6:45, swim team at 7:15!!!)


Tuesday: Thai peanut noodles



Wed. (Braden): Mac and cheese (didn't get it last week because he was sick!) with steam carrots. (Leftovers, too!)

Thurs.: Falafel with Tahini dressing (both are new recipes) and Tzatziki sauce (I use plain yogurt, garlic, shredded cucumbers, and I will experiment w/a little buttermilk. When I was in Germany, my Palestinian friend used a type of sour milk that is not available here... so, we'll see!)


Fri: Hopefully leftovers, otherwise pizza or something easy because I have a piano recital at my house at 7!

We have a crazy busy week ahead of us. Tuesday, Wednesday and Thursday, Harsha or I have evening appointments. And we have to get some shopping done for our trip to Orlando next week (I need a couple new swim suits - yay!) So with all that said, our menu isn't super exciting.

Summer Corn Chowder (I use milk rather than half & half. I also had .5 tsp of cumin and .5 tsp of cayenne to add a little spice to it.)

FRIDAY:
Pani Puri - If you are wondering what it is, there is a description on Wikipedia that I thought was interesting. We buy a kit from the Indian Market that has the Puris and chutney mixes. We make the potato filling ourselves, so it is fresh. The kids love it and I have a few friends who are hooked on it too :-)

We almost always go out on Saturday and I'm hoping Harsha will make dinner for us Sunday, since it is Mother's Day :)

Valerie's week of 4/28

This week has got to be one of the most hectic weeks I've had in ages! I figured a late post is better that none at all, though!

Mon. Leftovers

Tues. Terriyaki chicken (BBQ) with rice and salad. (The terriyaki marinade/sauce is very good... but I don't have the recipe handy. I will post it later.)

Wed.(Devin's dinner): Pita bread pizza. I just make a quick pizza sauce w/tomato sauce, garlic, onion, oregano, basil, thyme and a pinch of brown sugar. Then, the kids make their own pizza with mozarella, cheddar and assorted toppings.

Thurs. (Elana's-- and she made it!): Salad and Mexican Pizza: Mash a can of black beans w/2 tsp oil, add garlic (I diced 2 small cloves for Elana), 1/4 tsp cumin, 1/4 tsp chili powder and mix well. Then add small can (I only had Elana add half, because the kids are picky) of diced green peppers and mix.

Spread the beans evenly on 4 (she did 5) tortillas and cover with another tortilla. Top w/salsa, mozarella cheese, onions and peppers. Bake at 400 for 15 min. Rich and I also added some guac. on top before serving.

Friday: (Braden): Mac and cheese w/brocc and carrots and salad for all but Braden.

Breakfast & Lunch Comment

We got a comment asking about Breakfast and Lunch. Ladies, please chime in and let us know about your routine. Here is mine:

Breakfast: It is always a quick meal for us, even during the weekends. We generally eat cereal (cheerios, raisin bran, or total), oatmeal w/ craisins, walnuts & honey, or cream of wheat w/ honey. We'll also eat whatever fruit we have in the house, sometimes some toast and OJ.

Lunch: Once again, it is not planned out. We do leftovers a lot, the kids like Pasta Roni w/ frozen veggies added in, or sandwiches (cream cheese & hummus, or Peanut Butter & Nutella or Jelly). We always have some type of veggie and fruit as well. The fruit and veggie selection depends on what we have in the house.

Snacks: If I am ravenous, I'll eat lots of popcorn :-) The kids also love popcorn, so it's one of our favorites. We do Goldfish Crackers sometimes, share a PBJ sandwich sometimes, trail mix sometimes... if I am motivated and have a little extra time, I'll make a bean dip & eat with veggies. We also do lots of fruits.

We are on the run so often, that our morning and afternoon meals are quick and easy. Even during the weekends, we don't spend much time on the daytime meals, just dinner. Harsha and I both enjoy cooking, so dinner is the time we enjoy our cooking and eating time together.

Scheri's week of 4/28

So last week was kind of a bust for us. I thought the weather was going to be super nice, so I planned for a warm weather menu. Since the weather wasn't nearly as nice as expected, we ended up eating red bean stew, minestrone soup, lasagna, and going out to eat. We'll see how it goes this week.

Over the weekend, we tried Jenn's potato salad recipe and it was very, very good. We also tried the hummus recipe that was included in the article about Doctor's eating better. At first, it didn't taste well blended, but after it sat for an hour or so, the flavors blended together and it tasted great!

Here goes for this week:

MONDAY:

Black Bean Soup w/ rice, chips & salsa (our weakness is chips & salsa, so we eat a lot of it!)
- Grill 2 tomatoes, 1 onion, 1 pasilla pepper, and 1 jalepeno until soft.
- Blend the grilled veggies, with 2 tsp ground cumin, 2 tsp coriander, 1.5 c. Black Beans.
- Add the blended mixture to 4 cups broth & 2 c black beans. Salt to taste.

TUESDAY: I have a sitter Tuesday afternoons, so I will cook the pasta, cut the veggies and prepare the salad in the afternoon. Harsha will cook & put it all together when he gets home. I've found that it helps him tremendously if the majority of the prep work is done.

Veggies w/ Penne and Pesto:
- Ingredients: 1 med onion, 1 clove garlic minced, .5c chopped carrots, 1 med zucchini chopped, 1 bell pepper chopped, 1 Tbsp olive oil, 2 Tbsp Pesto sauce (until I can pick the herbs from my garden, I use the store bought Pesto sauce), cooked Penne, parmesan.
- In large pan, cook veggies w/ Olive oil until soft. Add the pesto sauce, pasta and about .25c of the water from cooked pasta. Serve w/ Parmesan

Spinach Salad w/ mandarine oranges, roasted almonds, and raspberry vinagrette

WEDNESDAY:

Baked Potatoes w/ chives & sour cream

Whole Wheat Tortillas w/ Hummus (left over from Sunday evening)

Herb Grilled Tomatoes (Jenn gave me this recipe last year)
- Ingredients: 1 Tbsp Olive Oil, 1 Tbsp Balsamic Vinegar, 1 garlic clove, minced, 1 tsp basil, minced, salt, pepper, 4 tomatoes, 1 Tbsp Parmesan
- Combine first six ingredients to create the marinade. Cut tomatoes in half. Add tomatoes to marinade & coat on all sides. Place tomatoes on the grill, turning often, until begin to soften and brown. Remove from grill and top with Parmesan cheese. Serve immediately.

THURSDAY:

Vegetable Pot Pie/Shepherds Pie
- Ingredients: 2 sweet potatoes, 1 Tbsp Butter, 1 onion, 1 tsp, 3 Tbsp Flour, 1 tsp garlic, 1 tsp parsley, 3 c mixed veggies (fresh assortment chopped or frozen - either tastes great), 3 c vegetable broth, 1 sheet thawed puff pastry dough
- Boil potatoes, then mash w/ butter. Layer in medium casserole dish.
- Saute onions in butter until soft. Add flour and cook for about a minute. Add broth, garlic, parsley and veggies. Cook until thick and veggies are softened. Pour on top of potatoes in casserole dish.
- Place the puff pastry on top of the veggie mixture and cook in the oven on 350 until pastry is golden.

Fruit Salad (whatever fruits I have with a touch of honey & lime)

FRIDAY: Harsha is going up to Buena Vista, so it is just the kids and I. I think I will probably do something real simple like mac n cheese w/ steamed veggies. Nothing too fancy for the three of us :-)

Val's menu for week of 4/21

Monday- Scheri's lentil soup. This was on the menu last week, but I had to postpone it until Sunday.... and then we went out to dinner last night! But, I had already cooked it yesterday, and have to say it tastes great! I'm looking forward to having it for dinner tonight! Thanks Scheri!



Tuesday- (Devin's menu) Corndogs, carrot sticks, salad and fruit salad.


Does anyone know of good veggie corndogs? If not, I'll just buy the turkey ones I can find at Safeway.



Wed. Enchilada casserole with cornbread and salad (I'm preparing this meal double for a neighbor whose 6 year old daughter was hit by a car last weekend. I couldn't think of anything else to bring them, but if anyone has any good recipes they would recommend as a food gift, let me know.)





Thurs (Braden, 3): Spaghetti, french bread with steamed peas and carrots.



Fri.: (Elana's day... but she hasn't chosen yet, so...)BBQ - Turkey burgers and veggie burgers, grilled veggie (whatever I see that looks good at the store) and homemade potato chips and fries.






Sat.: Either leftovers or Pita Pizza (kids love to make their own). I provide pizza sauce (tomato sauce w/garlic, onion, basil, oregano, etc), cheese, turkey pepperoni, bell peppers, etc. Everyone makes their own!

Scheri's week of 4/21

With the warmer weather, I'm having a tough time coming up with my menu. I don't want to be stuck in the kitchen, so I'm trying to find lots of quick recipes that don't require a lot of cooking. This is what I have for the week:

Monday:
Veggie Burgers (store bought)
Jenn's Potato Salad

Tuesday: (Harsha & the kids are having a picnic while I ride my bike)
Edamame and Carrot Salad w/ Rice Vinegar Dressing (New Recipe - I did read the reviews and they said to add ginger & use a hot pepper oil, so I'll be trying that.)
Pasta Salad (nothing fancy - Whole Wheat pasta, carrots, broccoli, (both cook a few minutes w/ pasta to soften), tomato, cheese, and Pesto Vinaigrette

Wednesday:
Lasagna (I make a vegetable marinara sauce, spinach, cottage cheese, and Parmesan) I have to deliver a meal for a lady in our MoMS Club, so I'm making two.
French Bread w/ olive oil & balsamic vinegar

Thursday:
Stuffed Bell Peppers (I have them in the freezer, but it's my wild rice & veggies inside the Bell Peppers, with some extra cheese on top. Cook on the grill until done.)
Spinach salad w/ walnuts & strawberries

Friday:
Zucchini boats (grill zucchini stuffed w/basil & sun dried tomato feta)
Grilled Corn on the cob
Mixed Bean Salad

Coconut Cake


So Friday night, Harsha shredded an entire coconut for his coconut curry. There was a little over 1.5 cups left, so I did a search to figure out what I could make. I came upon this recipe for a Coconut Cake.

I made two modifications to the recipe: 1. used only 1 cup of sugar versus 1 1/3 cup. 2. I used the freshly grated coconut.

And to top it off, I made a dark chocolate sauce and topped it with roasted almonds. It turned out really well. The cake is very dense and rich. I liked the flavor better once the cake cooled. Harsha and the kids liked it warm. Fruit would be excellent on top of it too.

Tracy's last week

Hi everyone,

I'm publishing my last week of meals, just so Connie won't feel so bad about her week. :) You can tell I'm a bachelorette. I don't cook alot but I do like homemade meals and fresh ingredients. And sorry, Scheri, but I eat a lot of meat. :)

Last Sunday: Rob took me out to the Loop mexican restaurant.

Monday: A bagel, leftover cauliflower, and leftover half can of Busch's Beans. Mmmmm.

Tuesday: Baked pork chops: Sprinkle dry stovetop stuffing on each side of the porkchops and bake them about 20 minutes at 400 degrees. The baking makes it one of the healthier ways to eat pork, and they're juicy and easy. Also, steamed asparagus and rolls.

Wednesday: Rob stole a salad for me from the Army cafeteria.

Thursday: An apple, oatmeal, cheese and crackers and chocolate chip cookies.

Friday: Macaroni and cheese.

Saturday: My Mom's Sicilian Spaghetti:
4 large tomatoes, cut into chunks
2 cans tuna
1 small can chopped olives
2 cups shredded mozzarella
1 pound (or less if you like sauce) angel hair pasta

Put the cut tomatoes in a saucepan with a little water and boil them lightly, they'll melt down into tomatoe-y sauce pretty quick. Add the tuna and chopped olives long enough to warm it all up. Pour over the angel hair pasta, then mix in the mozarella cheese. It's easy and all healthy ingredients. Then I cooked broccolli on the side.

The authentic Sicilian recipe uses anchovies instead of tuna but our family never had the courage to try that. :)

Boring week ahead and I'm not getting crazy since Guy is gone through Friday :(


Monday: leftovers

Tuesday: Chicken Divon

- 4 chicken breasts

- 2 packages broccoli flowerets, frozen

- 2 cans cream of chicken soup

- 1 cup mayo

- 2 tsp sherry

- 1/2 tsp curry powder

- 1 cup sharp cheddar (shredded)

- 1/2 can bread crumbs

- boil chicken and shred. Place chicken and broccoli in bottom of 9x13 inch pan. In separate bowl, combine soup, mayo, sherry and curry powder. Pour over chicken and broccoli. Sprinkle w/cheese. Put bread crumbs on top and bake at 350 for 30-40 minutes.

- this is a very easy recipe that you can make ahead of time. Scheri - I think you may like this minus the chicken and using some other cream soup. The sauce is great and you probably won't miss much flavor by taking out the meat.

Wednesday: fish (TBD), caramelized carrots, long grain rice

Caramelized carrots: Combine 1 pound baby carrots, 1 tablespoon low-sodium soy sauce, 2 teaspoons brown sugar, 2 teaspoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Arrange in a single layer on a baking sheet coated with cooking spray; place in oven on rack below pork. Bake at 475° for 15 minutes or until tender, turning once.

Thursday: Caesar salad and baked potatoes (we skipped last week!)

Friday: out

Saturday: Chicken and summer vegetable tostadas, black beans&cumin, mexican cole slaw

- cole slaw is 2 cups sliced cabbage, 1/2 c plum tomatoes, 1/3 c green onions, cilantro, 1 tbls lime juice, 1-2 tsp olive oil, touch of salt

Sunday: beer can chicken, napa cabbage salad (delicious!), foccacia bread

Scheri's week of 4/14

We have a busy week, so our menu is simple. Here goes:

Monday: Wild Rice & Veggies
Cook the rice (I use Lundberg Wild Rice). Saute veggies, then mix in the rice, add chopped almonds, parsley & feta cheese.

Tuesday: Baked Zitti
I make a simple marinara w/ veggies, then mix the pasta w/ the sauce & cottage cheese. Top with Parmesan and bake for 25 minutes.

Wednesday: Black Bean, Spinach & Corn Enchiladas, Chips & Salsa and Margaritas
For the enchilada sauce, I use grilled tomatoes, onions, & peppers - blend w/ a little chili pepper, coriander, cumin, and garlic salt.

Thursday: Couscous, grilled veggies, Blue Moose Sun dried Tomato & Walnut Hummus w/ Whole Wheat tortillas.
Couscous: I cook w/ a little broth, parsley and add spinach & Parmesan when done cooking.
Grilled Veggies: sweet potatoes, red bell peppers, carrots & zucchini. I cook them on foil on the grill w/ a tomato sauce - Spicy V8, Chili sauce, soy, garlic & ginger

Friday: Harsha is making vegetable coconut curry w/ basmati rice & parathas. I'll try to get him to write down how he makes it.
